Banana Chai Pancakes

I’ve got the Monday blues big time. I’m feeling a bit uninspired lately – tired, not very creative, not even very interested in anything. Mark feels the same. We’ve put it down to being in dire need of a holiday. Our last proper break was in August last year, so it’s no wonder we’re finding it hard to muster up enthusiasm for anything.

Anyway, now that I’ve caught your attention with such an upbeat, positive opening… sorry about that, it’s not like anyone loves Mondays is it!

Usually when I’m feeling a bit down I browse through my favourite health blogs looking for recipes I want to try. It helps me to have things to look forward to, and in the absence of a holiday, trying out an exciting new recipe and making it work is a pretty good option.

While I shake off my pity party for one and do that, I’ll share a great recipe for banana chai pancakes which definitely lifted my spirits one breakfast last week.

Banana Chai Pancakes

Ingredients:

½ cup buckwheat flour

1 banana

1 tsp baking powder

1 egg

1 tsp vanilla extract

1 tsp cinnamon

½ tsp nutmeg

½ tsp ground ginger

1 tbsp cacao

¼ cup oat milk

1 tbsp raw honey

1 tbsp soaked chia seeds (can omit)

A squeeze of lemon juice

Optional Chocolate Ganache

2 tbsp cacao

1 tbsp nut butter or tahini

1 tbsp raw honey

Dash of hot water

Instructions:

1.Place ingredients into food processor and pulse til combined. Let the mixture thicken in the fridge for 10-15 minutes.

2.Lightly grease a frying pan or flattop and spoon mixture into pan. Cook til bubbles form and then flip.

3.Chop fresh bananas to slide between pancake stacks, and drizzle with ganache or honey. Serve with greek or coconut yoghurt.
